Sloppy Joe Mini Pizzas

So fun.  That is how I describe this recipe besides delicious.  It is super quick and my son got a kick out of helping me.  If you do not want to use the canned manwich I have an easy delicious homemade sauce you can substitute below the recipe. 

What you need:

1 lb organic ground beef or ground turkey
1 can manwich
1 tube corn biscuits
White cheddar cheese, shredded
Pickles (I used bread and butter)

What you do:

Preheat your oven to 375.  Lightly grease a large baking sheet.  Press the biscuits out flat onto the sheet and make Sure to poke a few times with a fork.  This will prevent them from rising.  In a skillet brown the meat and add in the manwich.  Cook until slightly thickened.  Spoon about 2-3 TBSP of the meat mixture onto each biscuit.   Add on a large pickle or two small ones if you wish.  It tastes really good!  Sprinkle cheese on top.  Bake for about 10-12 minutes.  Serve with a side salad! 

If you prefer a homemade sauce just combine 1 cup ketchup, 1 tbsp tomato paste, 1 tbsp brown sugar, 1 tsp each onion and garlic powder, 1 tsp Worcester sauce, salt and pepper to taste. 

Why I started this blog... :)

I have wanted to make a recipe/family food blog for a while, but just recently decided to go ahead and do it.  I love food.  Always have.  When I think of food I think of family, comfort, and good times.  I have a brain full of recipes that I just cannot keep to myself anymore, and tons more that I've tried that I think should also be shared!  So here is my blog.  In the baby stages right now, but I hope to make it more amazing with each post I write and each recipe I share.  If you have any recipe requests or questions please feel free to email me!  Or comment on any post.

Crab Salad 2.0

I love crab salad.  For me and my family, it really isn't summer if we don't have it at least once.  So when I found a recipe for it, I was excited to see that it took the classic up a notch by adding in coleslaw.  I also came up with the idea that if you omit the pasta you could serve this delicious salad on fresh rolls as summertime sandwiches. 

What you will need:

3 cups cooked macaroni or shell pasta cooled.
1 cup real Mayo (homemade would be excellent!)
16 oz prepared coleslaw
2 cups imitation crab
1/2 organic frozen peas, thawed
1/2 shredded cheddar cheese or 1 1/2 cups cubed cheese
1 tsp dried dill
Salt/pepper

What you do:

Combine all ingredients.  That's it!  Keep cold.  Will last up to three days.

Easy Pasta Bake

I'm so sorry I don't have a picture of this one, but I assure you it's delicious enough to try without one.  If you don't have a blue cheese dressing on hand, that's OK.  Just omit it.  It will be delicious without! 

What you need:

1 box rotini pasta (or whatever pasta you wish)
1 jar organic spaghetti sauce
1/4 cup blue cheese dressing
1 cup shredded cheddar cheese divided
1 cup fresh grated parmesan cheese
2 organic eggs
1/2 tbsp each garlic powder and onion powder
2 tsp basil
Salt/pepper

What you do:

Preheat oven to 375.  Cook pasta according to directions but just until al dente.  Drain and set aside.  In a large bowl, combine sauce, dressing, 1/2 cup of cheeses, eggs, and spices.  Mix until eggs are well incorporated.   Add in pasta to coat.  In a 9x13 glass baking dish pour in pasta and sprinkle remaining Cheddar and parmesan cheese on top.  Bake for 35-40 minutes or until cheese is melted and edges are bubbly.  Let sit for five minutes before serving. 

It is such a simple dish but a fun and different way to serve pasta.  The blue cheese gives the dish a nice tang.  If you want to you could add in some Italian sausage or ground beef to give it a little bit more body.  I serve it with homemade garlic or cheesy bread.  It's a great weeknight meal and my kids love it.  :)
